The Butcher is responsible for preparing, processing and portioning meat products using traditional butchery techniques while ensuring products meet customer specifications, quality standards and food safety requirements. <h3>Benefits</h3><ul><li style="text-align:justify;">Permanent full-time employment</li><li style="text-align:justify;">Stable employment with a growing Queensland wholesale meat business</li><li style="text-align:justify;">Supportive team environment</li><li style="text-align:justify;">Opportunity for long-term career development</li><li style="text-align:justify;">Modern facilities and equipment</li></ul> <h3>Task & responsibilities</h3><ul><li style="text-align:justify;">Select, inspect and prepare beef, lamb and pork carcasses, primal and sub-primal cuts for processing</li><li style="text-align:justify;">Bone, trim, cut, slice and portion meat using specialist butchery techniques and hand tools</li><li style="text-align:justify;">Break down carcasses and wholesale cuts into retail and customer-specific portions according to production requirements</li><li style="text-align:justify;">Remove bones, excess fat, gristle and connective tissue to maximise product yield while maintaining quality standards</li><li style="text-align:justify;">Prepare a variety of fresh meat products including steaks, roasts, chops, diced meat, stir-fry cuts, mince and other customer-specific portions</li><li style="text-align:justify;">Prepare marinated, seasoned and value-added meat products in accordance with customer specifications where required</li><li style="text-align:justify;">Operate and maintain butchery equipment including bandsaws, slicers, mincers, grinders, vacuum packaging and portioning equipment</li><li style="text-align:justify;">Inspect meat products throughout the preparation process to ensure quality, freshness and compliance with company standards</li><li style="text-align:justify;">Package, label and prepare meat products for wholesale distribution in accordance with customer orders</li><li style="text-align:justify;">Monitor product quality and identify any defects or inconsistencies during processing</li><li style="text-align:justify;">Maintain strict food safety, hygiene, sanitation and workplace health and safety standards in accordance with legislative and company requirements</li><li style="text-align:justify;">Minimise product wastage through efficient cutting techniques and optimal utilisation of meat products</li><li style="text-align:justify;">Clean, sanitise and maintain work areas, knives, tools and equipment following each production shift</li><li style="text-align:justify;">Work collaboratively with production staff to ensure customer orders and daily production targets are achieved</li></ul> <h3>Qualification & experience</h3>Applicants must demonstrate:<ul><li style="text-align:justify;">A minimum of 12 months' recent full-time relevant employment as a Butcher</li><li style="text-align:justify;">A strong understanding of commercial butchery techniques, meat preparation and portion control</li><li style="text-align:justify;">Ability to safely operate commercial butchery equipment and machinery</li><li style="text-align:justify;">Knowledge of food safety, hygiene and workplace health and safety requirements</li><li style="text-align:justify;">Excellent attention to detail and commitment to producing high-quality products</li><li style="text-align:justify;">Ability to work efficiently in a fast-paced wholesale meat processing environment</li></ul>The successful applicant should possess:<ul><li style="text-align:justify;">Certificate III in Meat Processing or an equivalent relevant qualification; or</li><li style="text-align:justify;">In the absence of formal qualifications, at least three (3) years of full-time relevant work experience as a Butcher.</li></ul>
